Where wine can fight strong spice, acidity or umami, sake works with them, which is why it sits as easily next to a Sunday roast as it does sushi, curry, cheese or a Friday night pizza. Ours is clean, balanced and low in sugar, so it lifts a dish without crowding it. Pour it cold, sip it slow, and let it do the work of making the food taste better.

What does sake taste like?

Sake originates in Japan and tastes like little else. Expect umami and minerality with soft fruity undertones, clean rather than heavy. It tends to leave you feeling light and refreshed, with only a hint of a hangover when overdone. Rarer side effects include improved sword skills and a strong urge to rule over all samurai.

What is sake, exactly?

Sake is brewed from rice, water and a little yeast and koji, it's brewed like beer, but sipped like wine. Ours is brewed in Peckham, in small batches, the traditional way.

Is it good for you?

It's low in sugar, gluten free, sulphite free and vegan friendly. But it is still alcohol.

UK Chief Medical Officers recommend adults do not drink more than 14 units a week on a regular basis.

How should I serve it?

Cold, warm, with or without ceremony. It's not fussy, neither are you.

What goes with it?

Almost anything. Sushi and curry, yes, but also roasts, cheese, Michelin Star tasting menu's and a Friday pizza takeaway. Sake works with spice and umami where wine often struggles.

How long does it keep?

Best drunk within 1 year of bottling, refrigerate and consume within 2 weeks of opening. Store in a cool dark place.
