At Home In Peckham.

Building a sake brewery from scratch wasn’t the easy option — but for us, it was the right one.

Everyone thought we were mad for setting up a sake brewery from scratch. No outside investment, no prior brewing background, just a big idea and an even bigger belief in what sake could become.

In 2025, we set up our own brewery in Peckham, one of only two sake breweries in London. Built entirely from the ground up, we produce modern, high quality English sake in-house for drinkers looking for something different.

Locally Brewed, Ready for Anywhere.

Sake brewing is all about care and control — from preparinging the rice to making koji and managing fermentation, we do it all in-house, by hand.

Our rice blend combines the best of both worlds: world-renowned Yamada Nishiki from Japan and quality sushi rice grown right here in Europe.

From Tradition to Revolution.

Sake is one of the world's oldest drinks, and we have huge respect for the craft, culture and care that have gone into shaping it.

We also believe its future is just as exciting as its past, honouring traditional methods whilst reimagining what sake can be for today’s drinkers.

That means being hands-on with every part of the process, staying true to core techniques while pushing boundaries with new ingredients, flavour profiles and brewing styles.

We’re building on what came before, creating high-quality, modern sake that’s rooted in tradition but made for new and curious drinkers.

Rice, Water, Yeast & Liam.

As head brewer, Liam is at the heart of all aspects of sake production, bringing the perfect mix of technical skill, deep curiosity and serious attention to detail to sake brewing.

With four years as Head Brewer at Umbrella Brewery under his belt, he’s since trained in Japan at Okazaki and Daiman breweries and completed his WSET Level 3 in Sake.

Liam's philosophy is simple: blend tradition with innovation to brew high quality sake we're proud to pour and helps build a new chapter for sake in the UK.
